Most kitchens buy chef whites the same way: someone finds a jacket that looks right, orders one per chef, and then wonders six months later why half of them are grey, why nobody wears the long sleeves, and why there is never a clean one on a Saturday.

None of that is bad luck. It is what happens when uniform is bought as a one-off purchase rather than a rotating stock item. Here is how to think it through properly.

Why chef jackets are built the way they are

The double-breasted chef jacket is not a styling choice. The overlapping front does two useful jobs: it puts two layers of fabric between the chef and anything that spits out of a pan, and the panel can be reversed so a stained side can be swapped out of view mid-service. That is why the design has survived essentially unchanged for well over a century.

White became standard because it shows dirt. In a kitchen that is a feature rather than a flaw, because a soiled jacket announces itself and gets changed. White also reflects heat better than dark colours, which matters more than people expect when you are standing over a grill.

That said, plenty of modern kitchens have moved away from white, and there are good reasons to. Black hides oil marks and looks sharp in an open kitchen, though it shows flour badly and can be noticeably warmer. Some brigades colour-code by section or by role, which makes it obvious at a glance who is food-handling and who is passing through.

Fabric: the trade-off nobody explains at the point of sale

Almost all chef jackets come down to a choice between poly-cotton and 100% cotton.

Poly-cotton (commonly 65/35) is the workhorse. It is cheaper, holds its shape, resists shrinking, dries fast and stands up to repeated hot washing better than pure cotton. The downside is breathability, because polyester traps heat, and on a hot line a chef will feel it.

100% cotton breathes better and feels more comfortable in a hot kitchen. It also shrinks, creases, takes longer to dry and generally wears out faster under industrial laundering.

There is a third factor that resolves a lot of this argument: construction. A poly-cotton jacket with a mesh back panel or vented underarms will often be more comfortable in practice than a plain cotton one, because airflow beats fibre content. If you have a hot section, spec ventilation before you agonise over the fabric blend.

Weight matters too. Lighter fabrics are cooler but offer less splash protection and go translucent when damp. Heavier fabrics last longer and protect better. Grill and pass sections usually want a bit more weight; larder and pastry can go lighter.

Fit and fastenings

Sleeve length. Long sleeves offer better protection from splashes and steam burns, and some kitchens mandate them for that reason. Short sleeves are cooler and easier to keep clean at the cuff. Many kitchens run both and let the section dictate. If you buy long-sleeve only and the team rolls them up, you have lost the protection you paid for and gained a hygiene problem.

Buttons or press studs. Traditional knotted cloth buttons look the part and survive hot washes well. Press studs are faster to fasten and release under pressure, which is genuinely useful if something hot goes down the front and the jacket needs to come off in a hurry. Concealed studs give you the clean traditional look with the speed.

Fit. Chef jackets should be roomy. A tight jacket traps heat against the body and restricts reaching across a hot surface. Size up rather than down, and if you are ordering for a mixed brigade, get sizes tried on before committing to a bulk order. Returns on personalised garments are rarely straightforward.

Trousers. Often an afterthought, but a well-chosen pair does real work. Elasticated or drawstring waists cope with long shifts, and a straight leg is safer than anything that could catch. Patterned trousers hide marks better than plain black, which is why so many kitchens still use them.

Branding that survives the laundry

This is where a lot of custom kitchen uniform goes wrong. Chef whites live in hot industrial washes, often at 60C or above, sometimes with bleach in the mix. Decoration that would last years on a polo can look tired on a chef jacket within weeks.

  • Embroidery beats print on garments washed this hard. Print and transfers can crack or lift under repeated high-temperature washing and tumble drying.
  • Use polyester thread, not rayon. Rayon looks slightly glossier but has far less resistance to bleach and high temperatures. On kitchen whites, polyester is the right call every time.
  • Keep decoration away from abrasion points. The front edge of an apron and the cuff of a sleeve take a beating. Chest and upper sleeve are much safer positions.
  • Keep the logo simple. Fine detail and thin lettering do not reproduce well in small embroidery and do not age well either. A clean, bold mark reads better from across the pass anyway.

How many sets do you actually need?

This is the question that decides whether your uniform budget works or quietly haemorrhages money. The variable that matters most is laundry turnaround, not headcount. Work backwards from it:

  • On-site laundry, washed daily: two to three sets per full-time chef is usually enough.
  • On-site laundry, washed weekly: three to four sets, more for anyone on a hot or messy section.
  • Off-site or contract laundry: four to five sets, because you need enough in circulation to cover whatever is out being cleaned.

Then add a buffer. A couple of spare jackets in common sizes covers new starters, agency cover and the inevitable ruined garment on a Friday night. It is far cheaper than paying a rush charge on a single-item reorder.

Aprons rotate faster than jackets, since most kitchens get through several per chef per week, so buy those in deeper quantities and treat them as a consumable rather than a fixed asset.

Plan for replacement. Chef whites do not die suddenly; they fade. Budget an annual refresh rather than waiting until the brigade looks scruffy and you have to replace everything at once.

A short checklist before you order

  1. Which sections run hot, and do they need ventilation or short sleeves?
  2. White, black, or colour-coded by role?
  3. Poly-cotton for durability, or cotton for comfort?
  4. Studs or buttons?
  5. How does laundry work, and how many sets does that imply?
  6. Where does the logo go, and is it simple enough to embroider small?
  7. Do individual chefs get their names on?

Get those seven answers down and the order almost writes itself.

Frequently asked questions

Can chef whites be washed at home?

They can, but colour retention and hygiene are both harder to control. Most professional kitchens use a commercial laundry or an on-site machine capable of hot washes for exactly this reason.

Is it worth putting individual names on chef jackets?

In large brigades, hotels and cookery schools, yes. It dramatically reduces kit going missing and speeds up sorting after laundry. In a three-person kitchen, it is usually not worth the extra cost.

How long should a chef jacket last?

With sensible rotation and correct laundering, a good poly-cotton jacket should give you a year or more of regular service before it starts looking tired. If yours are failing much faster, the usual culprits are too few sets in rotation or over-aggressive laundering.
